Southwest White Chicken Chili

Delicious White Southwest Chicken Chili

Ingredients

1 lb boneless skinless chicken breasts, diced into 1/2-inch pieces
1 small red onion, diced
1/2 cup of red peppers diced
1 tbsp olive oil
2 cloves garlic, finely minced
2 (14.5 oz) cans chicken broth
1 1/2 tsp cumin
3/4 tsp paprika
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1 cup half and half
salt and freshly ground black pepper, to taste
1/2 cup mozzarella cheese
1 1/4 cup frozen corn & black beans
1 (15 oz) can navy white beans, drained and rinsed
1 Tbsp fresh lime juice
chopped fresh cilantro, for serving
shredded Monterrey Jack cheese, for serving
tortilla chips, for serving (optional)

Instructions

Heat olive oil in a medium sized pot over medium-high heat.
Once oil is hot add chicken and diced onion, red pepper, and saute until chicken is no longer pink, about 6 minutes. Add garlic and saute 30 seconds longer. Add chicken broth, cumin, paprika, oregano, cayenne pepper, and half and half and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat and simmer 15 minutes.
Add mozzarella cheese and stir until melted. Stir in corn & black beans, and navy beans,
Simmer about 15 minutes longer. Mix in fresh lime juice and serve with Monterrey Jack cheese, chopped cilantro and tortilla chips for dipping if desired.

You can also substitute chicken for turkey breast

Jamba-Gumbo-Laya

I like to call this dish Jamba-Gumbo-Laya.
I had no clue where I was going with this dish today but then it all came together. I didn't take step-by-step pics of the full dish because I was making it up as I went along.
It turned out to be very tasty! It really warms the soul on a snowy day like today here in Kansas City.

Trisha Rushing's Protein Shake Of The Day (Blueberry)

Since Protein Shakes are a part of my meal plan, I don't plan to have a simple bland flavored shake everyday. 
I plan to switch it up and make this fun! I like variety and I really like flavor and since I had some fresh blueberries in the fridge I figured I would give it a go!
And YES!!!! Perfect!
My protein shake is a whey protein vanilla creme flavor. I blended Unsweetened Vanilla Almond Milk, Blueberries, and  Stevia in it. Stevia is a South American plant based herb that has been used as a natural sweetener for centuries.

The Benefits Of Blueberries
Blueberries are jammed packed with antioxidant power, but the benefits of blueberries are far more than just the plant chemicals you hear about all the time. Blueberries fight disease on multiple levels, and are often overlooked as a tool to naturally good health. There is no downside to eating blueberries, kids can eat up to a quarter cup of delicious blueberries every day, and adults up to a whole cup of blueberries every day!

Day 7 Master Cleanse Detox

I soaked a few mint leaves in my concentrated lemon & lime juice then added some sparkling mineral water. Omg! Talk about refreshingly good! I made a Minty Sprite! Yep! These next few days are going to be sweet! Who knows? I may go longer than ten days.  ;-)
